That doesn’t mean he rushed to brew and package the next batch. “Product quality is our number-one thing. We haven’t sacrificed anything for volume.”

PART III

GEM STATE BREWING MAKING ITS OWN HISTORY

THE NORTHERN BREWING FRONT

According to most brewers in southern Idaho, there are two “big dogs” in Idaho’s Panhandle that are brewing some seriously tasty beers: Laughing Dog and Selkirk Abbey.

Laughing Dog brews eight IPAs throughout the year, taking head brewer Fred Colby’s love of lupulin to extremes most brewers won’t attempt. Selkirk Abbey’s head brewer, Jeff Whitman, decided to take his brewery in another direction, filling his catalogue full of delicious Belgian-style brews.

Another way these breweries have separated themselves from other Idaho brewers is that in order for Selkirk Abbey to open, Colby had to fight to get a law changed to allow him to have a vested interest in two breweries. His successful lobby to change the law made it so that Jeff Whitman could open Selkirk Abbey and put his delicious beers into the market.

These two breweries—along with Wallace Brewing, Trickster Brewing and Moscow Brewing Company—serve the northern Idaho Panhandle with fresh-made brews, as well as fantastic places to drink them.
